Ingredients

  • Chicken thighs or breasts (skinless, boneless)
  • Gravy mix or homemade gravy
  • Chicken broth (or vegetable broth)
  • Onions (chopped)
  • Garlic (minced)
  • Thyme or rosemary (optional)
  • Salt and pepper
  • Carrots (chopped)
  • Celery (chopped)
  • Mushrooms (sliced)

Instructions

  1. Prep the chicken by placing thighs into the crockpot and seasoning with salt and pepper.
  2. Add the chopped onions, minced garlic, and herbs over the chicken.
  3. Mix the gravy using package instructions and pour it over the chicken.
  4. Pour enough chicken broth to cover the chicken.
  5. Toss in vegetables on top, placing root veggies closer to the bottom.
  6. Cover and set the crockpot to low for 6–8 hours or high for 4–5 hours.
  7. Shred the chicken with two forks before serving and adjust seasoning if needed.

Notes

Add a dollop of sour cream or sprinkle fresh parsley before serving for extra flavor.
