Ingredients

- 1.5 lbs boneless chicken
- 8 oz cream cheese
- 1 onion, chopped
- 4 cloves garlic, minced
- 8 oz white button mushrooms, sliced
- 1 cup shredded cheddar cheese
- 1 cup chicken broth
- 2 cups zucchini, chopped
- 1 cup bell peppers, chopped
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the chicken in a skillet with olive oil until golden brown, about 5-7 minutes on each side. Remove and shred.
- Sauté the onions and garlic until translucent, about 3-4 minutes.
- Add the mushrooms and cook until tender.
- Combine the chicken, onions, mushrooms, cream cheese, chicken broth, and half the cheddar cheese in a mixing bowl.
- Transfer the mixture to a greased baking dish and top with remaining cheddar cheese.
- Bake for 25-30 minutes until bubbly and golden brown.
- Serve with a salad or sautéed vegetables.
Notes
Feel free to customize with your favorite vegetables. Can substitute chicken for tofu for a vegetarian option.
