Ingredients

  • 1.5 lbs boneless chicken
  • 8 oz cream cheese
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 8 oz white button mushrooms, sliced
  • 1 cup shredded cheddar cheese
  • 1 cup chicken broth
  • 2 cups zucchini, chopped
  • 1 cup bell peppers, chopped
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the chicken in a skillet with olive oil until golden brown, about 5-7 minutes on each side. Remove and shred.
  3. Sauté the onions and garlic until translucent, about 3-4 minutes.
  4. Add the mushrooms and cook until tender.
  5. Combine the chicken, onions, mushrooms, cream cheese, chicken broth, and half the cheddar cheese in a mixing bowl.
  6. Transfer the mixture to a greased baking dish and top with remaining cheddar cheese.
  7. Bake for 25-30 minutes until bubbly and golden brown.
  8. Serve with a salad or sautéed vegetables.

Notes

Feel free to customize with your favorite vegetables. Can substitute chicken for tofu for a vegetarian option.
