- 1 cup low-carb milk or chicken broth
- Salt and pepper to taste
- 1 tsp thyme
- 1 tsp paprika
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13-inch casserole dish with olive oil.
- In a skillet over medium heat, sauté chopped onions and minced garlic until golden and fragrant.
- Add the mushrooms and cook until they release their moisture and begin to brown.
- Cube the chicken into bite-sized pieces, season with salt, pepper, and desired herbs.
- Add the chicken to the skillet once the mushrooms are ready, cooking until it’s no longer pink.
- Stir in the chopped veggies and let them soften, then remove from heat.
- In a large bowl, blend the cream cheese with the low-carb milk or broth until smooth, adjusting seasonings as needed.
- Combine the chicken mixture with the cream cheese sauce until everything is well coated.
- Pour the mixture into the greased casserole dish and spread it out evenly.
- Bake uncovered for 25-30 minutes until the top is bubbly and golden.
