  • 8 oz Cream cheese
  • 1 cup Bell peppers, chopped
  • 1 cup Broccoli, chopped
  • 1 medium Zucchini, chopped
  • 2 cloves Garlic, minced
  • 1 medium Onion, chopped
  • 1 cup Cheddar cheese, shredded
  • 1 tbsp Fresh thyme, chopped
  • 1 tbsp Fresh parsley, chopped
  • Salt and pepper to taste
  • 2 tbsp Olive oil
  • 1/4 cup Chicken broth

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat olive oil in a skillet over medium heat.
  3. Add diced chicken and season with salt and pepper. Cook until golden and cooked through.
  4. Sauté garlic and onion until fragrant, then add in chopped vegetables and cook until tender.
  5. Mix cream cheese with herbs, chicken broth, salt, and pepper until creamy.
  6. Combine chicken, veggies, and creamy sauce in a baking dish.
  7. Sprinkle shredded cheddar cheese on top.
  8. Bake for 25 to 30 minutes until the cheese is bubbly and golden.
  9. Let cool for a few minutes before serving.
