- 2 cups Boneless chicken (breast or thighs), diced
- 8 oz Cream cheese
- 1 cup Bell peppers, chopped
- 1 cup Broccoli, chopped
- 1 medium Zucchini, chopped
- 2 cloves Garlic, minced
- 1 medium Onion, chopped
- 1 cup Cheddar cheese, shredded
- 1 tbsp Fresh thyme, chopped
- 1 tbsp Fresh parsley, chopped
- Salt and pepper to taste
- 2 tbsp Olive oil
- 1/4 cup Chicken broth
Instructions
- Preheat your oven to 350°F (175°C).
- Heat olive oil in a skillet over medium heat.
- Add diced chicken and season with salt and pepper. Cook until golden and cooked through.
- Sauté garlic and onion until fragrant, then add in chopped vegetables and cook until tender.
- Mix cream cheese with herbs, chicken broth, salt, and pepper until creamy.
- Combine chicken, veggies, and creamy sauce in a baking dish.
- Sprinkle shredded cheddar cheese on top.
- Bake for 25 to 30 minutes until the cheese is bubbly and golden.
- Let cool for a few minutes before serving.

Feel free to substitute ingredients like chicken for turkey or tofu for a plant-based version.
