- 1 to 1.5 loaves of challah or brioche bread, cubed
- 2 cups fresh blueberries (or frozen)
- 6 large eggs
- 2 cups full-fat milk (or almond/oat milk)
- 1 cup sugar
- 1 tablespoon vanilla extract
- 1 teaspoon cinnamon
- Butter for greasing the pan
Instructions
- Start by cutting around 1 to 1.5 loaves of your chosen bread into cubes, roughly two inches in size. Arrange the cubes in a greased 9×13-inch baking dish.
- In a bowl, whisk together 6 large eggs, 2 cups of milk, 1 cup of sugar, 1 tablespoon of vanilla extract, and 1 teaspoon of cinnamon until well combined.
- Gently pour the custard over the bread, ensuring every piece is soaked. Sprinkle 2 cups of blueberries over the top and gently press them in. Cover with foil and refrigerate overnight.
- Preheat your oven to 350°F (175°C). Remove the casserole from the fridge and let it sit for a few minutes while the oven preheats. Bake covered for 30 minutes, then uncover and bake for an additional 15-20 minutes, until the top is golden and crispy.
- Let it cool slightly, then serve with maple syrup, powdered sugar, or fresh whipped cream.
Notes
Can use other fruits instead of blueberries, such as strawberries or peaches. Always soak the bread overnight for best results.
