  • 1 tsp Vanilla Extract
  • 1 cup Semi-Sweet Chocolate Chips
  • Zest of 1 Lemon or Orange (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch springform pan and lightly flour it or line the bottom with parchment paper.
  3. In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  4. In a large bowl, mix the ricotta cheese and sugar until creamy with no lumps.
  5. Incorporate the eggs one at a time, then add the vanilla extract and citrus zest if using.
  6. Gradually fold in the dry ingredients into the wet mixture until just combined.
  7. Gently fold in the chocolate chips until evenly distributed.
  8. Pour the batter into the prepared pan and bake for 35-40 minutes, or until a toothpick comes out clean.
  9. Cool the cake in the pan for 10 minutes, then transfer it to a wire rack. Dust with powdered sugar before serving.

Notes

For a lighter option, decrease the sugar and increase the ricotta. Serve with fruit compote or vanilla ice cream.
