Ingredients

- 1 head Romaine lettuce, chopped
- 4 oz salami, sliced
- 4 oz capicola, sliced
- 4 oz Pecorino Romano or provolone cheese, shaved
- 1/2 cup green olives, pitted
- 1/2 cup black olives, pitted
- 1/2 cup pepperoncini, sliced
- 1/4 red onion, thinly sliced
- 1 cup cherry or grape tomatoes, halved
- 1/4 cup fresh parsley or basil, chopped
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- Salt and pepper to taste
Instructions
- Wash and dry the romaine lettuce, then chop it into bite-sized pieces and place it in a large mixing bowl.
- Slice the tomatoes and chop the red onion; add them to the bowl with the romaine.
- Layer in the slices of salami and capicola, followed by shavings of cheese.
- Add the olive medley and sliced pepperoncini to the mixture.
- Drizzle with olive oil and red wine vinegar, then season with salt and pepper. Toss gently to combine.
- Garnish with fresh herbs and serve immediately or let chill for about 30 minutes for enhanced flavor.
