Ingredients

  • 1 head Romaine lettuce, chopped
  • 4 oz salami, sliced
  • 4 oz capicola, sliced
  • 4 oz Pecorino Romano or provolone cheese, shaved
  • 1/2 cup green olives, pitted
  • 1/2 cup black olives, pitted
  • 1/2 cup pepperoncini, sliced
  • 1/4 red onion, thinly sliced
  • 1 cup cherry or grape tomatoes, halved
  • 1/4 cup fresh parsley or basil, chopped
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Wash and dry the romaine lettuce, then chop it into bite-sized pieces and place it in a large mixing bowl.
  2. Slice the tomatoes and chop the red onion; add them to the bowl with the romaine.
  3. Layer in the slices of salami and capicola, followed by shavings of cheese.
  4. Add the olive medley and sliced pepperoncini to the mixture.
  5. Drizzle with olive oil and red wine vinegar, then season with salt and pepper. Toss gently to combine.
