A comforting casserole that combines savory Italian sausage with buttery potatoes, layered with cheese and fresh herbs for a delicious family meal.

- 1 lb Italian sausage (spicy or sweet)
- 4 medium Yukon Gold or Russet potatoes, thinly sliced
- 1 large yellow or sweet onion, chopped
- 3 cloves garlic, minced
- 2 cups mixed vegetables (bell peppers, zucchini, spinach)
- 2 cups chicken or vegetable broth
- 2 cups shredded mozzarella or Parmesan cheese
- 2 tbsp olive oil
- 1 tsp oregano
- 1 tsp thyme
Instructions
- Preheat your oven to 375°F (190°C).
- Wash, peel, and thinly slice the potatoes. Soak in cold water to prevent browning.
- In a large skillet, heat olive oil and cook the Italian sausage until browned, about 7-10 minutes. Remove and set aside.
- In the same skillet, sauté onions until softened (3-4 minutes), then add garlic and cook for 1 more minute.
- In a large bowl, combine cooked sausage, sautéed onions, garlic, sliced potatoes, herbs, and broth. Mix well.
- Grease a baking dish and layer half the mixture in it. Sprinkle with half the cheese, then add the remaining mixture and top with the rest of the cheese.
- Cover with foil and bake for 30 minutes, then remove foil and bake for another 20-30 minutes until potatoes are tender and cheese is golden.
- Allow to rest for a few minutes before serving. Garnish with fresh herbs if desired.
Notes
For a spicier casserole, use hot Italian sausage. Always taste and adjust seasonings as needed.
