- Pie Crust (store-bought or homemade)
- 1 cup Pumpkin Puree
- 1 cup Mixed mushrooms (cremini and button)
- 2 cloves Garlic (minced)
- 1 tsp Fresh thyme
- 1 tsp Fresh sage
- 1 tsp Ground cinnamon
- 1/2 tsp Ground nutmeg
- 1 Egg (for wash or milk for vegan option)
Instructions
- Prepare the Dough: Roll out the pie crust to about 1/8 inch thick and cut out pumpkin shapes. Carve faces for Jack-O-Lanterns.
- Prepare the Filling: Sauté minced garlic in olive oil. Add sliced mushrooms and cook until softened. Stir in pumpkin puree, herbs, and spices.
- Fill the Pies: Spoon filling into the center of each pumpkin cutout, moisten edges with water, add another cutout on top, and seal.
- Bake: Preheat the oven to 375°F (190°C). Bake for 20–25 minutes until golden brown.
- Cool and Serve: Let cool slightly before serving warm.
