Ingredients

- 1 pound skirt steak
- ¼ cup olive oil
- 3–4 cloves of minced garlic
- Salt and pepper to taste
- Juice of 1 lemon
- 1 cup couscous
- 1 cup water
- Chopped parsley
- Chopped mint
- Zest of 1 lemon
Instructions
- Marinate the skirt steak by combining olive oil, minced garlic, salt, pepper, and lemon juice. Place the steak in a resealable bag with the marinade for 30 minutes to 2 hours.
- In a saucepan, bring 1 cup of water to a boil, add couscous, remove from heat, and cover for 5 minutes.
- Fluff the couscous with a fork and mix in parsley, mint, lemon zest, and a drizzle of olive oil. Season to taste.
- Preheat the grill to high heat. Grill the steak for 3-5 minutes per side for medium-rare.
- Let the steak rest for 5-10 minutes, then slice against the grain.
- Serve the steak over couscous and garnish with additional herbs.
Notes
For best results, allow the grilled steak to rest and avoid over-marinating.
