Ingredients

  • ¼ cup olive oil
  • 34 cloves of minced garlic
  • Salt and pepper to taste
  • Juice of 1 lemon
  • 1 cup couscous
  • 1 cup water
  • Chopped parsley
  • Chopped mint
  • Zest of 1 lemon

Instructions

  1. Marinate the skirt steak by combining olive oil, minced garlic, salt, pepper, and lemon juice. Place the steak in a resealable bag with the marinade for 30 minutes to 2 hours.
  2. In a saucepan, bring 1 cup of water to a boil, add couscous, remove from heat, and cover for 5 minutes.
  3. Fluff the couscous with a fork and mix in parsley, mint, lemon zest, and a drizzle of olive oil. Season to taste.
  4. Preheat the grill to high heat. Grill the steak for 3-5 minutes per side for medium-rare.
  5. Let the steak rest for 5-10 minutes, then slice against the grain.
  6. Serve the steak over couscous and garnish with additional herbs.
