Ingredients

  • 1 lb skirt steak (or flank steak)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup couscous
  • 1 cup vegetable or chicken broth
  • Juice of 1 lemon
  • Fresh herbs (parsley, mint)
  • Salt and pepper to taste

Instructions

  1. Marinate the skirt steak with olive oil, minced garlic, salt, pepper, and a splash of lemon juice for at least 30 minutes.
  2. Bring broth to a boil, stir in couscous, cover and remove from heat. Let sit for 5 minutes, fluff with a fork.
  3. Preheat grill to high heat. Grill the marinated skirt steak for 3-4 minutes on each side for medium-rare.
  4. Let the steak rest for 5-10 minutes, then slice against the grain.
  5. Serve alongside the couscous garnished with fresh herbs.

Notes

Allow the steak to come to room temperature before grilling for even cooking. Use a meat thermometer for best results.
