Description

A comforting dish that combines the spicy, fermented tang of kimchi with rich butter and tender udon noodles, topped with a perfectly soft-boiled egg.


Ingredients

  • 200g udon noodles
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 cup kimchi
  • 2 tablespoons soy sauce
  • 2 green onions, chopped
  • 2 large eggs
  • Optional protein (sliced pork belly, tofu, or shrimp)

Instructions

  1. Boil water in a large pot and cook the udon noodles according to package instructions until tender. Drain and set aside.
  2. Melt 2 tablespoons of butter over medium heat in a skillet. Add minced garlic and stir for about a minute until fragrant.
  3. Stir in 1 cup of kimchi and cook for 2-3 minutes.
  4. Add the drained udon noodles to the skillet, along with 2 tablespoons of soy sauce. Toss until well-combined.
  5. Boil water in a small pot. Carefully add the eggs and cook for 6-7 minutes, then transfer to an ice bath. Once cooled, peel and set aside.
  6. Serve the udon in bowls, topped with a soft-boiled egg and a sprinkle of chopped green onions.

Notes

For best results, use high-quality kimchi and ensure your noodles are freshly cooked. Adjust ingredient amounts to suit your taste preferences.
