Ingredients

  • 4 bone-in lamb chops
  • 2 tablespoons Dijon mustard
  • 2 teaspoons fresh thyme leaves
  • 2 minced garlic cloves
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Pat the lamb chops dry with paper towels and season both sides with salt and pepper.
  2. In a bowl, mix together Dijon mustard, fresh thyme, and minced garlic. Drizzle with olive oil and whisk until combined.
  3. Heat a skillet over medium-high heat, add olive oil, and sear the lamb chops for about 4–5 minutes on each side.
  4. Preheat your oven to 400°F (200°C) and transfer the skillet with lamb chops to the oven. Roast for 6–8 minutes.
  5. Brush the lamb chops with the mustard thyme sauce halfway through cooking.
  6. Let the lamb chops rest for about 5 minutes before serving, drizzled with remaining sauce.
