- 4 bone-in lamb chops
- 2 tablespoons Dijon mustard
- 2 teaspoons fresh thyme leaves
- 2 minced garlic cloves
- 3 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Pat the lamb chops dry with paper towels and season both sides with salt and pepper.
- In a bowl, mix together Dijon mustard, fresh thyme, and minced garlic. Drizzle with olive oil and whisk until combined.
- Heat a skillet over medium-high heat, add olive oil, and sear the lamb chops for about 4–5 minutes on each side.
- Preheat your oven to 400°F (200°C) and transfer the skillet with lamb chops to the oven. Roast for 6–8 minutes.
- Brush the lamb chops with the mustard thyme sauce halfway through cooking.
- Let the lamb chops rest for about 5 minutes before serving, drizzled with remaining sauce.
