Ingredients

  • 4 skin-on, bone-in chicken thighs
  • 4 tablespoons unsalted butter
  • 2 fresh lemons (juice and zest)
  • 2 cloves garlic, minced
  • Fresh herbs (thyme, rosemary, or parsley)
  • Salt and pepper, to taste

Instructions

  1. Pat the chicken thighs dry with paper towels. Season generously with salt and pepper.
  2. In a large skillet over medium heat, melt the unsalted butter, then add minced garlic. Sauté for about a minute until fragrant.
  3. Squeeze in the juice of one lemon and add the zest.
  4. Place the chicken thighs skin-side down in the skillet and sear for 5-7 minutes until golden and crispy. Flip and cook for another 5 minutes.
  5. Lower the heat and squeeze the remaining lemon juice over the thighs, add fresh herbs, cover, and simmer until fully cooked (165°F), about 10-15 minutes.
  6. Baste the chicken with sauce a few times while it simmers.
  7. Plate the chicken, drizzle more butter sauce, and garnish with fresh herbs and lemon slices.

Notes

Allow chicken to rest for a few minutes before slicing to maintain juiciness.
