Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 4 fresh lemons (juice and zest)
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup whole milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a round cake pan.
  2. In a large bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In another bowl, cream together the softened butter and granulated sugar until fluffy.
  4. Add eggs one at a time, mixing well after each. Stir in lemon zest.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Start and end with flour mixture.
  6. Gently fold in fresh lemon juice.
  7. Pour batter into the prepared cake pan. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Allow to cool for 10 minutes in the pan before transferring to a wire rack to cool completely.
  9. Frost with icing or dust with powdered sugar before serving.

Notes

For an extra citrus kick, drizzle a lemon glaze made from powdered sugar and lemon juice over the cooled cake.
