- 1 ½ cups granulated sugar
- 4 fresh lemons (juice and zest)
- 1 cup unsalted butter, softened
- 4 large eggs
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 cup whole milk
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a round cake pan.
- In a large bowl, whisk together flour, baking powder, and salt. Set aside.
- In another bowl, cream together the softened butter and granulated sugar until fluffy.
- Add eggs one at a time, mixing well after each. Stir in lemon zest.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk. Start and end with flour mixture.
- Gently fold in fresh lemon juice.
- Pour batter into the prepared cake pan. Bake for 25-30 minutes or until a toothpick comes out clean.
- Allow to cool for 10 minutes in the pan before transferring to a wire rack to cool completely.
- Frost with icing or dust with powdered sugar before serving.
Notes
For an extra citrus kick, drizzle a lemon glaze made from powdered sugar and lemon juice over the cooled cake.
