- 4 boneless chicken breasts or thighs
- 2 tablespoons fresh lemon juice
- 1/2 cup Romano cheese, shredded or grated
- 3 cloves garlic, minced
- 4 tablespoons butter
- 1/4 cup chicken broth
- Fresh parsley or basil, for garnish
- Salt and pepper, to taste
Instructions
- Lightly pound the chicken to an even thickness.
- Generously season the chicken with salt and pepper.
- In a large skillet, melt butter over medium heat and sauté minced garlic until fragrant.
- Add the chicken to the skillet and cook for 4-5 minutes on each side until golden brown and cooked through.
- Remove chicken and add chicken broth and lemon juice to the skillet, scraping the bottom of the pan for flavor.
- Return the chicken to the skillet, sprinkle with Romano cheese, and allow it to melt into the sauce.
- Finish with fresh herbs and serve with extra lemon zest and cracked pepper.
Notes
For a lighter variation, use chicken broth instead of butter and try Parmesan cheese if Romano is unavailable.
