Ingredients

  • 1/2 cup granulated sugar
  • 1 packet (2 1/4 teaspoons) gelatin
  • 3 tablespoons cold water
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract (optional)
  • Fresh berries for topping

Instructions

  1. Prepare the gelatin: Sprinkle gelatin over cold water in a small bowl, and let it bloom for 5–10 minutes.
  2. Combine the cream and sugar in a saucepan over medium heat, stirring until the sugar dissolves.
  3. Incorporate the bloomed gelatin into the hot cream mixture, stirring until fully dissolved.
  4. Add in the fresh lemon juice and zest, stirring until well combined.
  5. Strain the mixture through a fine-mesh sieve into serving glasses and refrigerate for at least 240 minutes or until set.
  6. Serve chilled, garnished with fresh berries and a drizzle of honey if desired.
