Ingredients

- 2 cups heavy cream
- 1/2 cup granulated sugar
- 1 packet (2 1/4 teaspoons) gelatin
- 3 tablespoons cold water
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract (optional)
- Fresh berries for topping
Instructions
- Prepare the gelatin: Sprinkle gelatin over cold water in a small bowl, and let it bloom for 5–10 minutes.
- Combine the cream and sugar in a saucepan over medium heat, stirring until the sugar dissolves.
- Incorporate the bloomed gelatin into the hot cream mixture, stirring until fully dissolved.
- Add in the fresh lemon juice and zest, stirring until well combined.
- Strain the mixture through a fine-mesh sieve into serving glasses and refrigerate for at least 240 minutes or until set.
- Serve chilled, garnished with fresh berries and a drizzle of honey if desired.
