A light and vibrant lemon panna cotta dessert that captures the essence of summer.
Ingredients

- 2 cups heavy cream
- 1/2 cup sugar
- 1/2 cup freshly squeezed lemon juice
- 2 teaspoons lemon zest
- 1 tablespoon powdered gelatin or 2 sheets gelatin
- 1 teaspoon vanilla extract
- Fresh berries for garnish
Instructions
- In a small bowl, sprinkle the gelatin over cold water and let it bloom for 5 to 10 minutes.
- In a saucepan, combine heavy cream, sugar, lemon juice, and lemon zest. Heat over medium heat until the sugar dissolves, making sure it doesn’t boil.
- Remove from heat and stir in gelatin until fully dissolved.
- Add vanilla extract and mix well.
- Pour into serving glasses or ramekins and cool to room temperature before refrigerating for at least 4 hours until set.
- Garnish with fresh berries and serve.
Notes
For a dairy-free option, substitute heavy cream with coconut cream. You can also use honey or agave nectar instead of sugar.
