Ingredients

- 1 lb ground or thinly sliced lean beef
- 2 stalks fresh lemongrass, minced
- 2 tbsp soy sauce
- 2 cloves garlic, minced
- 1 tsp sugar
- 4 rice paper wrappers
- 1 cup sautéed mixed vegetables (cabbage, carrots, bell peppers)
- Fresh herbs (mint, cilantro, basil)
- Dipping sauce (peanut or hoisin sauce)
Instructions
- Prepare the beef: Marinate your beef in a mixture of minced lemongrass, soy sauce, garlic, and a hint of sugar for at least 30 minutes.
- Sauté the vegetables: Heat oil in a skillet over medium heat and sauté your veggies until tender but crisp.
- Cook the beef: Add marinated beef into the skillet with the veggies and cook until fully browned, about 5-7 minutes.
- Prepare the rice paper: Soak each wrapper in warm water for a few seconds until soft, then lay flat.
- Assemble the rolls: Place a spoonful of filling, top with fresh herbs, roll tightly.
- Serve with sauce: Arrange rolls on a platter and serve with your favorite dipping sauce.
Notes
Make sure to not soak rice paper too long to avoid tearing. Use fresh ingredients for the best flavor.
