Ingredients

- 2 cups water or broth

Instructions
- Rinse the quinoa under cold water until the water runs clear.

- In a mixing bowl, combine diced cucumber and crumbled feta cheese.
- In a separate bowl, whisk together lemon juice, olive oil, salt, and pepper.
- Once the quinoa has cooled, mix it with the cucumber and feta, drizzle with the dressing, and toss gently.
- Add fresh herbs, let it sit for 30 minutes to meld the flavors, and serve.
