Instructions
- In a large pot, melt the butter over medium heat. Add the diced onions and a pinch of salt. Sauté until translucent, then add minced garlic.
- Add broccoli florets and stir to coat in the buttery mixture, cooking for a few minutes until they begin to soften.
- Sprinkle flour over the broccoli and stir to create a roux, cooking for a minute to remove the raw flour taste.
- Gradually pour in the broth, stirring until well combined, and bring to a gentle simmer.
- Reduce heat and stir in the milk or cream until you achieve a rich, creamy texture.
- Remove from heat and stir in the shredded cheddar until melted.

Notes
For a smoother soup, blend it with an immersion blender. Reserve some broccoli florets before blending for added texture. Avoid high heat when melting cheese to prevent graininess.
