- 2 boneless chicken breasts or thighs
- 2 cups broccoli florets
- 8 oz pasta (fettuccine or penne)
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 2 tablespoons butter
Instructions
- Boil salted water in a large pot and cook the pasta according to package instructions until al dente. Reserve a cup of pasta water before draining.
- In a large skillet, melt 2 tablespoons of butter over medium heat. Sauté minced garlic for 1-2 minutes until fragrant, ensuring it doesn’t burn.
- Add diced chicken, season with salt and pepper, and cook until golden brown and cooked through (about 5-7 minutes). Remove the chicken and set aside.
- In the same skillet, add chopped broccoli and a splash of reserved pasta water. Sauté for 3-4 minutes until bright green and tender yet crisp.
- Lower the heat and pour in heavy cream, stirring until heated through. Gradually mix in grated Parmesan cheese until smooth.
- Return the chicken to the skillet, followed by the drained pasta. Stir gently to combine everything until well-coated, adding more pasta water if needed to achieve the desired consistency.
- Finish with fresh herbs of your choice for added flavor.
Notes
You can substitute chicken with shrimp or tofu for a vegetarian option. Use frozen broccoli or any pasta variety you have on hand.
