- 4 large russet or Yukon gold potatoes, peeled and diced
- 2 cups sharp cheddar cheese, shredded
- 1 cup heavy cream or whole milk
- 4 cups chicken or vegetable broth
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 6 slices bacon, cooked and crumbled
- 1/4 cup green onions or chives, chopped
- Salt, to taste
- Black pepper, to taste
- 1/2 teaspoon paprika (optional)
Instructions
- Peel and dice the potatoes into even cubes. Mince garlic and chop onions.
- In a large pot, cook bacon over medium heat until crispy. Remove bacon, leaving drippings in the pot.
- Add onions and garlic to the drippings and sauté until onions are translucent.
- Stir in diced potatoes and pour in enough broth to cover. Bring to a boil, then reduce to a simmer for 15-20 minutes until tender.
- Use a potato masher to mash the potatoes slightly for a thicker texture. Stir in cream while keeping the soup simmering.
- Gradually add shredded cheese, stirring until melted. Adjust seasoning with salt, pepper, and paprika.
- Serve hot, garnished with crumbled bacon, chopped green onions, and extra cheese if desired.
- Store leftovers in an airtight container in the fridge for up to 3 days.
Notes
For extra creaminess, blend a portion of the soup and stir it back in. Avoid boiling after adding cheese to prevent curdling.
