Ingredients

  • 1 cup cooked lobster meat, chopped
  • 1/2 cup sharp cheddar cheese, shredded
  • 1/2 cup Gruyère cheese, shredded
  • 4 slices thick sourdough or Texas toast
  • 2 tablespoons butter, softened
  • Fresh herbs (thyme, dill, etc.), optional
  • 1 clove garlic, minced (optional)
  • 1 tablespoon lemon juice (optional)
  • Old Bay seasoning, to taste (optional)

Instructions

  1. If using fresh lobster, boil the lobster in salted water until bright red, then remove the meat and chop.
  2. In a bowl, combine lobster meat, cheeses, herbs, garlic, and seasonings.
  3. Spread butter on the outsides of each slice of bread.
  4. In a skillet over medium heat, place one slice of bread and layer with half the cheese-lobster mixture, then top with another slice of bread.
  5. Cook for 3-4 minutes on each side until golden brown and the cheese is melted.
  6. Remove from heat, slice in half, and serve warm with dipping sauce or salad.

Notes

For lighter options, use low-fat cheese or whole-grain bread. Experiment with different cheese combinations for a twist.
