Ingredients

- 1 cup cooked lobster meat, chopped
- 1/2 cup sharp cheddar cheese, shredded
- 1/2 cup Gruyère cheese, shredded
- 4 slices thick sourdough or Texas toast
- 2 tablespoons butter, softened
- Fresh herbs (thyme, dill, etc.), optional
- 1 clove garlic, minced (optional)
- 1 tablespoon lemon juice (optional)
- Old Bay seasoning, to taste (optional)
Instructions
- If using fresh lobster, boil the lobster in salted water until bright red, then remove the meat and chop.
- In a bowl, combine lobster meat, cheeses, herbs, garlic, and seasonings.
- Spread butter on the outsides of each slice of bread.
- In a skillet over medium heat, place one slice of bread and layer with half the cheese-lobster mixture, then top with another slice of bread.
- Cook for 3-4 minutes on each side until golden brown and the cheese is melted.
- Remove from heat, slice in half, and serve warm with dipping sauce or salad.
Notes
For lighter options, use low-fat cheese or whole-grain bread. Experiment with different cheese combinations for a twist.
