- 1 medium green cabbage, chopped
- 4 cups homemade vegetable or chicken broth
- 1 onion, diced
- 2 carrots, diced
- 3 cloves garlic, minced
- 2 cups canned tomatoes, crushed
- Fresh parsley or thyme for garnish
- Salt and pepper to taste
- 1 bay leaf
- Crushed red pepper flakes to taste
- Olive oil for sautéing
Instructions
- Prepare the vegetables: Chop the cabbage, dice the onion and carrots, and mince the garlic.
- Sauté aromatics: In a large pot, heat a splash of olive oil over medium heat. Add the onion and carrots, cooking until soft. Stir in the garlic and cook until fragrant, about 1-2 minutes.
- Add the cabbage: Toss in the cabbage and mix it with the sautéed vegetables, cooking for about 5 minutes until it starts to wilt.
- Incorporate broth and tomatoes: Pour in the broth and add the tomatoes, crushing them gently with a spoon. Stir to combine.
- Season and simmer: Add bay leaves, salt, pepper, and red pepper flakes. Bring to a gentle boil, then lower the heat and let it simmer for about 30-40 minutes.
- Finish with herbs: Just before serving, stir in fresh herbs and adjust seasoning if necessary.
Notes
You can substitute cabbage with kale or Swiss chard and use any leftover vegetables.
