Ingredients

  • 1 bay leaf
  • Crushed red pepper flakes to taste
  • Olive oil for sautéing

Instructions

  1. Prepare the vegetables: Chop the cabbage, dice the onion and carrots, and mince the garlic.
  2. Sauté aromatics: In a large pot, heat a splash of olive oil over medium heat. Add the onion and carrots, cooking until soft. Stir in the garlic and cook until fragrant, about 1-2 minutes.
  3. Add the cabbage: Toss in the cabbage and mix it with the sautéed vegetables, cooking for about 5 minutes until it starts to wilt.
  4. Incorporate broth and tomatoes: Pour in the broth and add the tomatoes, crushing them gently with a spoon. Stir to combine.
  5. Season and simmer: Add bay leaves, salt, pepper, and red pepper flakes. Bring to a gentle boil, then lower the heat and let it simmer for about 30-40 minutes.
  6. Finish with herbs: Just before serving, stir in fresh herbs and adjust seasoning if necessary.

Notes

You can substitute cabbage with kale or Swiss chard and use any leftover vegetables.
