Ingredients

- 2 barramundi fillets
- 1 cup crushed macadamia nuts
- 1/2 cup breadcrumbs (panko or regular)
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh thyme, chopped
- 2 tbsp butter, melted (or olive oil)
- Juice of 1 lemon
- Salt and pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse the barramundi and pat dry with paper towels.
- Combine crushed macadamia nuts, breadcrumbs, parsley, thyme, salt, and pepper in a mixing bowl.
- Brush melted butter over each fillet and press the macadamia mixture onto the buttered side.
- Bake for about 15-20 minutes until the fish flakes easily and the crust is golden brown.
- Drizzle with fresh lemon juice and sprinkle with herbs before serving.
Notes
For an alternate flavor, try using pecans or almonds instead of macadamia nuts. Ensure the fish is dry for a crispy crust.
