- 4 Fresh barramundi fillets
- 1 cup Macadamia nuts, crushed
- 1 cup Breadcrumbs (preferably panko)
- 2 cloves Garlic, minced
- 1/4 cup Fresh parsley, chopped
- 2 tablespoons Olive oil or melted butter
- Salt and pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare your ingredients by chopping macadamia nuts and mixing them with breadcrumbs, minced garlic, parsley, salt, and pepper.
- Prep the barramundi by rinsing and drying the fillets, then season with salt and pepper.
- Coat the top side of the fish with olive oil or melted butter, then press the crust mixture firmly onto it.
- Bake the coated fillets on a lined baking sheet for about 15-20 minutes until the fish flakes easily and the crust is golden brown.
- Serve hot with lemon wedges on the side.
Notes
For a gluten-free version, use ground almond flour or gluten-free breadcrumbs. Substitute barramundi with snapper or cod if unavailable.
