Description

Delicious Mango Cheesecake Bars with a buttery graham cracker crust and creamy mango filling that evoke the taste of sunshine.


Ingredients

  • 16 ounces cream cheese, softened
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar (for crust)
  • ¾ cup granulated sugar (for filling)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups ripe mango puree (about 2 medium mangoes)

Instructions

  1. Preheat your oven to 350°F (175°C), and line a 9×9-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a bowl, combine graham cracker crumbs, melted unsalted butter, and sugar until well-mixed. Press this mixture into the bottom of the prepared pan to form a crust.
  3. Bake the crust for about 10 minutes until lightly golden. Let it cool while you prepare the filling.
  4. In a large mixing bowl, beat softened cream cheese and sugar until creamy and smooth.
  5. Add in eggs, one at a time, mixing well after each addition. Stir in vanilla extract.
  6. Fold in pureed ripe mango until fully incorporated.
  7. Pour the filling into the cooled crust and spread it evenly with a spatula.
  8. Bake for 25-30 minutes or until the filling is set but still jiggly in the center. Remove from the oven and let it cool to room temperature.
  9. Chill in the refrigerator for at least 4 hours, then cut into bars and serve.

Notes

For best results, chill overnight for the flavors to meld beautifully.
