- 16 ounces cream cheese, softened
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar (for crust)
- ¾ cup granulated sugar (for filling)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups ripe mango puree (about 2 medium mangoes)
Instructions
- Preheat your oven to 350°F (175°C), and line a 9×9-inch baking pan with parchment paper, leaving some overhang for easy removal.
- In a bowl, combine graham cracker crumbs, melted unsalted butter, and sugar until well-mixed. Press this mixture into the bottom of the prepared pan to form a crust.
- Bake the crust for about 10 minutes until lightly golden. Let it cool while you prepare the filling.
- In a large mixing bowl, beat softened cream cheese and sugar until creamy and smooth.
- Add in eggs, one at a time, mixing well after each addition. Stir in vanilla extract.
- Fold in pureed ripe mango until fully incorporated.
- Pour the filling into the cooled crust and spread it evenly with a spatula.
- Bake for 25-30 minutes or until the filling is set but still jiggly in the center. Remove from the oven and let it cool to room temperature.
- Chill in the refrigerator for at least 4 hours, then cut into bars and serve.
Notes
For best results, chill overnight for the flavors to meld beautifully.
