Ingredients

  • 1 bone-in, fully cooked ham (spiral-cut recommended)
  • 1 cup maple syrup
  • 1/2 cup bourbon
  • 1/4 cup Dijon mustard
  • 1/2 cup brown sugar
  • 1/2 tsp ground cloves
  • 1/2 tsp ground cinnamon
  • 1/2 tsp black pepper
  • 1/4 cup orange juice or zest

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Place the ham on a large roasting pan and score the surface in a diamond pattern.
  3. In a saucepan, combine maple syrup, bourbon, Dijon mustard, brown sugar, cloves, cinnamon, and black pepper. Heat over medium-low heat until the sugar dissolves, about 5 minutes.
  4. Generously brush the glaze over the scored ham and pour some into the bottom of the roasting pan.
  5. Tent the ham with aluminum foil and roast for 15-20 minutes per pound, basting every 30 minutes.
  6. About 30 minutes before finishing, increase the oven temperature to 400°F (200°C) and remove the foil to caramelize the glaze.
  7. Check the internal temperature, which should reach 140°F (60°C).
  8. Let the ham rest for at least 15 minutes before slicing.

Notes

Use a meat thermometer to ensure the ham is cooked to the proper temperature. Don’t skip the resting period for moist slices. Save some glaze for drizzling when serving.
