  • 3 tablespoons Dijon Mustard

  • 1 tablespoon fresh Rosemary or Thyme
  • Salt and Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the marinade by whisking together maple syrup, Dijon mustard, garlic, salt, and pepper.
  3. Season the tenderloin with olive oil and generous amounts of salt and pepper.
  4. Sear the pork in a hot skillet for 3-4 minutes per side until golden.
  5. Glaze the tenderloin with half of the marinade and transfer it to an oven-safe dish.
  6. Bake for 20-25 minutes, basting halfway through.
  7. Check for doneness using a meat thermometer (145°F).
  8. Let it rest for 5-10 minutes before slicing.
  9. Serve with pan juices and garnished with herbs.
