Description

A delightful side dish featuring sweet potatoes caramelized with maple syrup and crispy bacon, perfect for any gathering.

Ingredients

Scale
  • 4 medium sweet potatoes
  • 1/4 cup pure maple syrup
  • 4 slices thick-cut bacon
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. Peel and dice the sweet potatoes into even chunks.
  3. In a large bowl, combine the diced sweet potatoes with melted butter, maple syrup, minced garlic, salt, pepper, and thyme.
  4. Pour the mixture onto the prepared baking sheet, spreading the sweet potatoes in a single layer.
  5. Chop the bacon into small pieces and scatter it over the sweet potatoes.
  6. Roast in the preheated oven for about 25-30 minutes, stirring halfway through, until the sweet potatoes are tender and golden brown, and the bacon is crispy.
  7. Once out of the oven, let it sit for a few minutes and serve warm, drizzled with extra maple syrup if desired.

Notes

For a healthier version, consider using turkey bacon or a plant-based alternative. You can also replace butter with olive oil for a vegan option.
