- Winter Squash (Butternut, Acorn, or Delicata)
- 2 tablespoons Miso Paste (White or Yellow)
- 2 tablespoons Maple Syrup
- 1 tablespoon Olive Oil (or Sesame Oil)
- 2 cloves Garlic, minced
- Salt & Pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the winter squash by cutting it in half and scooping out the seeds.
- Cut the squash into 1-inch cubes.
- Whisk together miso paste, maple syrup, olive oil, and minced garlic in a bowl.
- Toss the cubed squash in the miso mixture.
- Spread the squash on a baking sheet lined with parchment paper.
- Roast for about 25-30 minutes or until tender and golden brown, tossing halfway through.
- Allow to cool slightly before serving, drizzling with additional maple syrup if desired.
Notes
For extra flavor, consider garnishing with toasted nuts or fresh herbs before serving.
