Instructions
- Prep the Pork Tenderloin: Trim excess fat and pat dry with paper towels.
- Season and Sear: Season with salt and pepper, and sear in olive oil for 4-5 minutes on each side until browned.
- Create the Sauce: Add minced garlic and rosemary, cooking until fragrant, then add balsamic vinegar and scrape up the fond.
- Deglaze and Simmer: Pour in chicken broth and stir in Dijon mustard, letting it simmer.
- Finish Cooking the Pork: Return the tenderloin to the skillet and cover, cooking until the internal temperature reaches 145°F (63°C).
- Rest and Serve: Let the pork rest before slicing and serve with the sauce drizzled on top.
Notes
For best results, use a meat thermometer and allow the meat to rest before slicing to retain juices.
