- 1 cup finely chopped pistachios (or almonds)
- 1 cup granulated sugar (or brown sugar)
- 1 cup all-purpose flour (or almond flour for gluten-free)
- 3 large eggs (or flaxseed meal for vegan option)
Instructions
- Preheat your oven to 350°F (175°C) and grease a round springform pan with parchment paper.
- In a large bowl, beat together mascarpone cheese and sugar until smooth.
- Add eggs, one at a time, mixing well after each.
- In another bowl, whisk together flour and chopped pistachios. Gradually fold this mixture into the wet ingredients.
- Transfer the batter to the prepared pan and smooth the top.
- Bake for 30-35 minutes, until the center is set and lightly golden.
- Let cool in the pan for 10 minutes, then remove the sides and cool completely on a wire rack.
- Drizzle honey and sprinkle additional pistachios on top before serving.
