Instructions
- Preheat your oven to 350°F (175°C) and line your muffin tin with paper liners.
- In a bowl, whisk together the flour, baking powder, baking soda, pumpkin pie spice, and matcha powder.
- In another bowl, combine the pumpkin puree, sugar, eggs, and melted butter, mixing until smooth.
- Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Fold in the white chocolate chips, ensuring even distribution.
- Spoon the batter into the prepared muffin tins, filling each cup about two-thirds full.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
- Serve warm, optionally with a dollop of cream cheese or powdered sugar.
