Description
A comforting Meatball Stroganoff made with homemade meatballs, savory mushrooms, and creamy sauce, served over egg noodles.

- 1 lb ground beef (or a blend of beef and pork)
- 8 oz fresh button or cremini mushrooms, sliced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 8 oz egg noodles (or whole wheat/gluten-free pasta)
- 1 cup sour cream
- 2 cups low-sodium beef broth
- 2 tbsp Worcestershire sauce (optional)
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- In a large bowl, mix together the ground meat, breadcrumbs, egg, minced garlic, and seasoning. Form small meatballs—about one inch in diameter.
- Heat a skillet over medium heat and brown the meatballs in batches.
- In the same skillet, add more oil and toss in sliced mushrooms and chopped onions. Sauté until onions are translucent and mushrooms soften.
- Pour in the beef broth and bring to a gentle simmer. Stir in mustard or Worcestershire sauce if using.
- Gently place the browned meatballs into the skillet, letting them simmer in the sauce for about 10-15 minutes.
- Reduce the heat to low and stir in the sour cream until creamy and blended.
- Toss the cooked egg noodles into the sauce, or serve the meatballs on top. Garnish with fresh parsley before serving.
Notes
For a thicker sauce, consider adding a cornstarch slurry towards the end of cooking.
