Description

A comforting Meatball Stroganoff made with homemade meatballs, savory mushrooms, and creamy sauce, served over egg noodles.


Ingredients

  • 1 lb ground beef (or a blend of beef and pork)
  • 8 oz fresh button or cremini mushrooms, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 oz egg noodles (or whole wheat/gluten-free pasta)
  • 1 cup sour cream
  • 2 cups low-sodium beef broth
  • 2 tbsp Worcestershire sauce (optional)
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. In a large bowl, mix together the ground meat, breadcrumbs, egg, minced garlic, and seasoning. Form small meatballs—about one inch in diameter.
  2. Heat a skillet over medium heat and brown the meatballs in batches.
  3. In the same skillet, add more oil and toss in sliced mushrooms and chopped onions. Sauté until onions are translucent and mushrooms soften.
  4. Pour in the beef broth and bring to a gentle simmer. Stir in mustard or Worcestershire sauce if using.
  5. Gently place the browned meatballs into the skillet, letting them simmer in the sauce for about 10-15 minutes.
  6. Reduce the heat to low and stir in the sour cream until creamy and blended.
  7. Toss the cooked egg noodles into the sauce, or serve the meatballs on top. Garnish with fresh parsley before serving.

Notes

For a thicker sauce, consider adding a cornstarch slurry towards the end of cooking.
