Description

Ingredients

  • 2 cups Fresh Spinach
  • 1 cup Crumbled Feta Cheese
  • 2 Cloves Garlic, minced
  • 2 tablespoons Olive Oil
  • 2 Eggs
  • Salt and Pepper to taste
  • Herbs (dill, parsley, or oregano) as preferred

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the spinach by sautéing it in olive oil until wilted, about 2 to 3 minutes.
  3. Mix the wilted spinach, crumbled feta, minced garlic, and eggs in a large bowl. Season with salt, pepper, and herbs.
  4. Shape the mixture into small patties on a parchment-lined baking sheet.
  5. Bake for 15 to 20 minutes until golden brown and crispy.
  6. Serve warm, optionally with a yogurt-based dipping sauce.
