- 2 cups Fresh Spinach
- 1 cup Crumbled Feta Cheese
- 2 Cloves Garlic, minced
- 2 tablespoons Olive Oil
- 2 Eggs
- Salt and Pepper to taste
- Herbs (dill, parsley, or oregano) as preferred
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the spinach by sautéing it in olive oil until wilted, about 2 to 3 minutes.
- Mix the wilted spinach, crumbled feta, minced garlic, and eggs in a large bowl. Season with salt, pepper, and herbs.
- Shape the mixture into small patties on a parchment-lined baking sheet.
- Bake for 15 to 20 minutes until golden brown and crispy.
- Serve warm, optionally with a yogurt-based dipping sauce.
Notes
