Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. Whisk together the flour, baking powder, and salt in a mixing bowl.
  3. Cream the butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, incorporating each fully before adding the next.
  5. Stir in the vanilla extract and lemon zest.
  6. Alternate adding the flour mixture and buttermilk to the butter mixture, starting and ending with the flour.
  7. Fold in the blueberries gently.
  8. Pour the batter into the prepared cake pan and smooth the top.
  9. Bake for 35 to 40 minutes, or until a toothpick inserted comes out clean.
  10. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  11. Dust the cooled cake with powdered sugar before serving.
