Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
- Whisk together the flour, baking powder, and salt in a mixing bowl.
- Cream the butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, incorporating each fully before adding the next.
- Stir in the vanilla extract and lemon zest.
- Alternate adding the flour mixture and buttermilk to the butter mixture, starting and ending with the flour.
- Fold in the blueberries gently.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 35 to 40 minutes, or until a toothpick inserted comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Dust the cooled cake with powdered sugar before serving.
