- 2 pounds ground beef
- 2 sweet onions, chopped
- 4 cloves fresh garlic, minced
- 2 large eggs
- 1 cup bread crumbs
- 2 cups beef broth
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 bay leaf
- 1 cup mozzarella or Gruyère cheese, shredded
Instructions
- In a large mixing bowl, combine the ground beef, chopped onions, minced garlic, breadcrumbs, eggs, and seasonings. Mix gently but thoroughly.
- Using your hands, shape the mixture into golf ball-sized meatballs.
- If desired, heat a skillet over medium-high heat and sauté the meatballs until browned on all sides.
- Place the meatballs in the slow cooker in a single layer.
- In a separate bowl, mix the beef broth, Worcestershire sauce, and herbs. Pour this mixture over the meatballs.
- Cover and set the slow cooker to cook on low for 6-8 hours or on high for 3-4 hours.
- During the last 30 minutes of cooking, sprinkle shredded cheese on top of the meatballs.
- Gently scoop out the meatballs and serve hot, garnished with fresh herbs.
Notes
These meatballs can be served over mashed potatoes, creamy polenta, or with crusty bread for a delightful meal.
