Ingredients

  • 2 pounds ground beef
  • 2 sweet onions, chopped
  • 4 cloves fresh garlic, minced
  • 2 large eggs
  • 1 cup bread crumbs
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 cup mozzarella or Gruyère cheese, shredded

Instructions

  1. In a large mixing bowl, combine the ground beef, chopped onions, minced garlic, breadcrumbs, eggs, and seasonings. Mix gently but thoroughly.
  2. Using your hands, shape the mixture into golf ball-sized meatballs.
  3. If desired, heat a skillet over medium-high heat and sauté the meatballs until browned on all sides.
  4. Place the meatballs in the slow cooker in a single layer.
  5. In a separate bowl, mix the beef broth, Worcestershire sauce, and herbs. Pour this mixture over the meatballs.
  6. Cover and set the slow cooker to cook on low for 6-8 hours or on high for 3-4 hours.
  7. During the last 30 minutes of cooking, sprinkle shredded cheese on top of the meatballs.
  8. Gently scoop out the meatballs and serve hot, garnished with fresh herbs.

Notes
