- 1 lb Ground Beef or Turkey
- 2 Sweet Yellow Onions, sliced
- 1 cup Italian-seasoned Breadcrumbs
- 1 Egg
- 2 cloves Garlic, minced
- 1/2 cup Beef Broth
- 2 tbsp Worcestershire Sauce
- 2 tbsp Fresh Thyme or Parsley, chopped
- Salt and Pepper to taste
Instructions
- Prepare the onions: Heat some olive oil in a skillet, add onions and salt, and cook low and slow until caramelized (20-30 minutes).
- Make the meatball mixture: In a bowl, combine ground beef, breadcrumbs, egg, garlic, Worcestershire sauce, and herbs. Mix gently.
- Form the meatballs into medium-sized balls.
- Layer half of the caramelized onions in the bottom of the Crock Pot, place meatballs on top, and add the remaining onions.
- Pour beef broth over the mixture, ensuring the meatballs are submerged.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Serve the meatballs with fresh herbs and enjoy with sides such as mashed potatoes or crusty bread.
Notes
For a lighter option, substitute ground turkey or a plant-based alternative. The flavor is enhanced by searing meatballs first before slow cooking.
