- 1 cup granulated sugar
- 1 cup cake flour (or all-purpose flour)
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1/2 tsp almond extract
- 6 oz bittersweet chocolate (or semi-sweet chocolate)
- Powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C) and line your cake pan with parchment paper.
- Whip the egg whites in a mixing bowl until soft peaks form, gradually adding sugar until stiff peaks form.
- Fold in cake flour, baking powder, salt, and extracts gently to avoid deflating the egg whites.
- Transfer the batter to the prepared pan and smooth out the top.
- Bake for approximately 30-35 minutes, until the cake is golden and firm. Allow it to cool inverted.
- Melt the chocolate in a double boiler or microwave for the molten center.
- Once cooled, slice the cake horizontally and fill layers with melted chocolate.
- Dust the top with powdered sugar and serve, allowing chocolate to flow out for a ‘lava’ effect.
Notes
Ensure egg whites are whipped properly for a fluffy texture. Serve warm with ice cream or whipped cream if desired.
