Ingredients

  • 2 lbs chicken (thighs or breasts)
  • 23 chipotle peppers in adobo sauce
  • 1/2 cup white or apple cider vinegar
  • 5 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 tsp cumin
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1 cup chicken or vegetable broth
  • 1 tbsp oil (for sautéing)

Instructions

  1. In a blender, combine chipotle peppers, vinegar, garlic, onion, and spices. Blend until smooth.
  2. Place chicken pieces in a bowl, cover with marinade, and refrigerate for at least an hour (overnight is better).
  3. In a large skillet, heat oil over medium heat. Add marinated chicken and cook until golden brown on each side.
  4. Pour remaining marinade and broth into the skillet, stir gently, and bring to a gentle simmer.
  5. Cover and reduce heat to low, simmer for 20-30 minutes until chicken is tender.
  6. Remove from heat, let rest for a few minutes, then serve.

Notes

For best results, marinate the chicken for at least 1 hour to enhance flavor. Serve with rice, tortillas, or black beans.
