- 2 lbs chicken (thighs or breasts)
- 2–3 chipotle peppers in adobo sauce
- 1/2 cup white or apple cider vinegar
- 5 cloves garlic, minced
- 1 medium onion, chopped
- 1 tsp cumin
- 1 tsp dried oregano
- 1 tsp paprika
- 1 cup chicken or vegetable broth
- 1 tbsp oil (for sautéing)
Instructions
- In a blender, combine chipotle peppers, vinegar, garlic, onion, and spices. Blend until smooth.
- Place chicken pieces in a bowl, cover with marinade, and refrigerate for at least an hour (overnight is better).
- In a large skillet, heat oil over medium heat. Add marinated chicken and cook until golden brown on each side.
- Pour remaining marinade and broth into the skillet, stir gently, and bring to a gentle simmer.
- Cover and reduce heat to low, simmer for 20-30 minutes until chicken is tender.
- Remove from heat, let rest for a few minutes, then serve.
Notes
For best results, marinate the chicken for at least 1 hour to enhance flavor. Serve with rice, tortillas, or black beans.
