- 2 lbs boneless chicken (breast or thighs)
- 2 cans (15 oz each) cannellini or navy beans
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 2 tsp cumin
- 2 tsp coriander
- 1 tsp cinnamon
- 1 tsp paprika
- 2 carrots, diced
- 1 bell pepper, diced
- 4 cups chicken broth (or vegetable broth)
- Fresh parsley or cilantro for garnish
- Olive oil for sautéing
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until fragrant and golden brown.
- Sprinkle in the spices (cumin, coriander, and paprika) and stir for a minute. Add chicken pieces and brown on all sides.
- Add diced carrots and bell peppers, cooking for about five minutes until softened.
- Pour in the broth and bring to a simmer. Add the white beans.
- Season with salt, pepper, and a pinch of cinnamon. Cover and simmer for 30-45 minutes.
- Check for seasoning and add fresh herbs right before serving.
- Ladle into bowls and serve with rice or bread, garnished with fresh herbs.
Notes
For a vegetarian version, replace chicken with tofu or chickpeas. You can also use lentils instead of beans.
