Description

A comforting and flavorful stew with tender chicken, creamy white beans, and a blend of aromatic spices, perfect for family gatherings.


Ingredients

  • 2 lbs boneless chicken (breast or thighs)
  • 2 cans (15 oz each) cannellini or navy beans
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 2 tsp cumin
  • 2 tsp coriander
  • 1 tsp cinnamon
  • 1 tsp paprika
  • 2 carrots, diced
  • 1 bell pepper, diced
  • 4 cups chicken broth (or vegetable broth)
  • Fresh parsley or cilantro for garnish
  • Olive oil for sautéing
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until fragrant and golden brown.
  2. Sprinkle in the spices (cumin, coriander, and paprika) and stir for a minute. Add chicken pieces and brown on all sides.
  3. Add diced carrots and bell peppers, cooking for about five minutes until softened.
  4. Pour in the broth and bring to a simmer. Add the white beans.
  5. Season with salt, pepper, and a pinch of cinnamon. Cover and simmer for 30-45 minutes.
  6. Check for seasoning and add fresh herbs right before serving.
  7. Ladle into bowls and serve with rice or bread, garnished with fresh herbs.

Notes

For a vegetarian version, replace chicken with tofu or chickpeas. You can also use lentils instead of beans.
