- 8 oz long pasta (spaghetti or fettuccine)
- 4 tbsp unsalted butter
- 3 cloves fresh garlic, minced
- 1/4 cup mixed fresh herbs (basil, parsley, chives)
- 1/2 cup freshly grated Parmesan cheese
- Salt to taste
- Pepper to taste
Instructions
- Cook the Noodles: Begin by boiling water in a large pot and seasoning it generously with salt. Add your noodles and cook them according to the package instructions until al dente. Save a cup of the pasta cooking water before draining.
- Sauté the Garlic: In a large skillet, melt the butter over medium heat. Add minced garlic and allow it to sauté gently until fragrant and golden, about 1–2 minutes. Be careful not to burn it!
- Combine Noodles and Sauce: Once the noodles are drained, add them to the skillet with the sautéed garlic. Here, you can pour in a splash of the reserved pasta water to help create a silky sauce that clings to the noodles beautifully.
- Add Fresh Herbs and Cheese: Toss in your selected herbs and sprinkle the grated Parmesan. Stir well to combine everything, letting the warmth of the noodles wilt the herbs ever so slightly.
- Season and Serve: Taste and adjust the seasoning with salt and black pepper. Serve immediately, perhaps with a sprinkling of extra Parmesan or a drizzle of olive oil for that finishing touch.
Notes
For gluten-free, substitute noodles with spiralized zucchini. Olive oil can replace butter for a different flavor.
