- 2 cups cooked chicken, diced
- 1 cup fresh cremini or button mushrooms, sliced
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- 2 cups cheddar cheese, shredded
- 1 cup breadcrumbs
- 1 tablespoon butter
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a skillet, melt butter over medium-high heat. Add the diced chicken and cook until golden brown.
- Add minced garlic and sliced mushrooms, stirring until the mushrooms soften.
- In a bowl, mix cream of chicken soup, sour cream, and half of the cheddar cheese. Stir in the sautéed chicken and mushrooms.
- Pour the mixture into the baking dish and smooth it out.
- In another bowl, combine breadcrumbs, remaining cheese, and a bit of melted butter. Sprinkle over the casserole.
- Bake for 30-35 minutes until the top is golden brown and bubbly.
- Allow to cool for 5-10 minutes before serving.
Notes
For a lighter version, consider diluting the cream of chicken soup with chicken broth.
