Instructions
- Preheat oven to 325°F (160°C). Grease a springform pan or line with parchment paper.
- Combine graham cracker crumbs and melted butter in a bowl. Press firmly into the bottom of the springform pan.
- In a large bowl, beat softened cream cheese until smooth. Gradually add sugar and mix well.
- Add eggs one at a time, mixing well after each addition. Stir in espresso, cocoa powder, and vanilla until combined.
- Pour cheesecake mixture over the crust, spreading evenly.
- Bake for 55-65 minutes, until edges are set but the center jiggles slightly.
- Cool in the oven with the door open for 1 hour.
- Transfer to the refrigerator and chill for at least 4 hours, preferably overnight.
- Serve with a garnish of whipped cream or cocoa powder.
