- 1 graham cracker crust (store-bought or homemade)
- 1 cup heavy cream
- 1 cup espresso or strong brewed coffee
- 1/2 cup granulated sugar
- 8 oz quality dark chocolate
- 1 tsp vanilla extract
- 3 large eggs
Instructions
- Prepare the crust: If making from scratch, crush graham crackers and combine with melted butter and a little sugar. Press into a pie dish and bake at 350°F (175°C) for 10 minutes or until lightly golden. Allow to cool completely.
- Make the filling: In a saucepan over medium heat, combine sugar, espresso (or coffee), and chocolate. Stir until melted and smooth, then let it cool slightly.
- Whip the cream: In a mixing bowl, whip the heavy cream until soft peaks form. Gently fold in the cooled chocolate mixture and vanilla extract.
- Assemble the pie: Pour the mocha filling into the cooled crust and smooth the top.
- Chill: Cover with plastic wrap and refrigerate for at least four hours, or overnight.
- Serve: Top with whipped cream and chocolate shavings, if desired.
Notes
For added depth, sprinkle a pinch of sea salt over the top before serving. Optionally, serve with vanilla ice cream or fresh berries.
