A delightful holiday side dish that combines fresh green beans with a creamy mushroom sauce, topped with crispy fried onions.

- 1 pound fresh green beans, trimmed and cut into bite-sized pieces
- 8 ounces button or cremini mushrooms, sliced
- 1 can cream of mushroom soup
- 1/2 cup milk or cream
- 1 onion, fried or diced
- 2 cloves garlic, minced
- 1/2 cup shredded cheddar or Gruyère cheese (optional)
- Salt and pepper to taste
- Butter for sautéing
Instructions
- Preheat your oven to 350°F (175°C).
- Blanch green beans in boiling water for 2-3 minutes, then drain.
- In a skillet, melt butter over medium heat and sauté mushrooms with a pinch of salt for 5-7 minutes until moisture is released.
- Add minced garlic to the skillet and cook for another minute.
- In a bowl, combine sautéed mushrooms, cream of mushroom soup, milk, salt, and pepper.
- Mix green beans with the mushroom sauce in a greased baking dish.
- Top with fried onions and optional cheese.
- Bake for 25-30 minutes, or until bubbly and golden.
- Let it sit for a few minutes before serving.
Notes
For added crunch, sprinkle more fried onions on top a few minutes before baking is complete. Store leftovers in an airtight container for up to 3-4 days.
