Description

A delightful holiday side dish that combines fresh green beans with a creamy mushroom sauce, topped with crispy fried onions.


Ingredients

  • 1 pound fresh green beans, trimmed and cut into bite-sized pieces
  • 8 ounces button or cremini mushrooms, sliced
  • 1 can cream of mushroom soup
  • 1/2 cup milk or cream
  • 1 onion, fried or diced
  • 2 cloves garlic, minced
  • 1/2 cup shredded cheddar or Gruyère cheese (optional)
  • Salt and pepper to taste
  • Butter for sautéing

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Blanch green beans in boiling water for 2-3 minutes, then drain.
  3. In a skillet, melt butter over medium heat and sauté mushrooms with a pinch of salt for 5-7 minutes until moisture is released.
  4. Add minced garlic to the skillet and cook for another minute.
  5. In a bowl, combine sautéed mushrooms, cream of mushroom soup, milk, salt, and pepper.
  6. Mix green beans with the mushroom sauce in a greased baking dish.
  7. Top with fried onions and optional cheese.
  8. Bake for 25-30 minutes, or until bubbly and golden.
  9. Let it sit for a few minutes before serving.

Notes

For added crunch, sprinkle more fried onions on top a few minutes before baking is complete. Store leftovers in an airtight container for up to 3-4 days.
