Delicious soft pretzels filled with gooey mozzarella, enhanced by the flavors of rosemary and Parmesan.

- 4 cups all-purpose flour
- 1 packet instant yeast
- 1 ½ cups warm water (110°F)
- 1 tbsp sugar
- 1 tsp salt
- ¼ cup unsalted butter, melted
- 2 tbsp fresh rosemary, chopped
- 1 cup grated Parmesan cheese
- 1 cup high-moisture mozzarella cheese, cubed
- ¼ cup baking soda (for boiling)
- Sea salt (for sprinkling)

- Prepare the dough: In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy. Add salt, melted butter, and flour, then mix until the dough begins to form. Knead for about 5 minutes until smooth and elastic.
- Let it rise: Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 60 minutes, or until it doubles in size.
- Shape the pretzels: Punch down the dough and divide it into smaller pieces. Roll each piece into a long rope (about 24 inches) and twist it into a pretzel shape, sealing the edges well.
- Stuff with mozzarella: Before the final twist, tuck in cubes of mozzarella and a sprinkle of rosemary in the center. Pinch the dough closed.
- Boil and bake: Bring a pot of water to a gentle boil; add baking soda. Boil each pretzel for about 30 seconds on each side, then place them on a parchment-lined baking sheet.
- Brush with butter and bake: Brush the tops with melted butter and sprinkle with grated Parmesan and sea salt. Bake in a preheated oven at 425°F for about 12-15 minutes, or until golden brown.
- Serve and enjoy: Allow to cool slightly before serving, as the mozzarella inside will be hot.
Notes
Kneading develops gluten for chewier pretzels. Do not skip the boiling step for the classic pretzel crust.
