- 1 1/2 cups crushed graham crackers
- 1/2 cup melted butter
- 1/4 cup sugar
- 1 package (3.9 oz) chocolate pudding mix
- 2 cups milk
- 1 tsp vanilla extract
- 1 cup sweetened shredded coconut
- 1/2 cup toasted pecans, chopped
- 1/4 cup brown sugar
- Whipped topping (store-bought or homemade)
Instructions
- In a bowl, mix the crushed graham crackers, melted butter, and sugar. Press firmly into a pie dish to form the crust and bake at 350°F for 8-10 minutes. Let it cool.
- In another bowl, combine chocolate pudding mix and milk according to package instructions, whisk until thick and smooth, and add vanilla extract.
- Spread the chocolate pudding mixture over the cooled graham cracker crust.
- Mix shredded coconut, toasted pecans, and brown sugar in a bowl. Sprinkle over the chocolate layer.
- Top with whipped cream if desired and refrigerate for at least 4 hours or overnight.
Notes
For a gluten-free option, use crushed almonds or gluten-free cookies for the crust.
